When I lived in Florida we had a Hardee’s near by. I would go there from time to time for a burger and fries, but I was surprised to find this recipes for a sweet treat ! Enjoy!
Mixture
1 small box Kellogg’s bran flakes
1 Tbs cinnamon
2 Tbs brown sugar, packed
2 Tbs butter, melted

Biscuit Dough
2 1/2 cups Bisquick
2 Tbs sugar
1/2 cup dark raisins
1/3 cup buttermilk
1/2 cup tonic water
1/2 tsp vanilla

MIXTURE- Empty the box of cereal into blender. Add in cinnamon and brown sugar and pulse on high speed, for about 3 seconds or until crumbled, but not powdered. Empty into small bowl. Stir in melted butter with a fork. Set aside.

BISCUIT DOUGH- Using a 2-qt mixing bowl. Stir Bisquick together with sugar and raisins. Put buttermilk, Tonic water and vanilla into a measuring cup, and pour into Bisquick mixture. Use a fork to mix until all of the liquid is absorbed. Then knead in the bowl with hands, dipping into additional Bisquick, to make dough smooth and no longer stick. Break dough up into 5 portions in the bowl – sprinkle the “Flake” mixture over the dough and then work it in until most of it is evenly distributed throughout the dough.

Divide dough into 12 equal parts and shape each into 1/2″ thick patty, arranging close together in Pam-sprayed 12″ round or oven-proof skillet (or use 2 8″ round layer cake pans). Bake at 400F for 25 minutes or until golden brown. Remove pan to wire rack and wipe tops with icing.

ICING- In small bowl with electric mixer on high speed, beat 2 tbs melted butter, 1 tsp vanilla, 2 tbs sour cream, dash of salt and 1-1/2 c powdered sugar until smooth.

Place a rounded tbs of icing atop each biscuit right out of the oven. The heat of the biscuit will soften the icing just enough that you can swirl it around to coat the tops nicely, letting the icing stand on the warm biscuits half a minute before spreading it.

Refrigerate any leftover icing in covered container to use within 2 weeks.

Copycat Arby’s Barbecue Sauce

Posted by: ChefTom in Categories: Arbys, Recipes.

I know everyone loves Arby’s!  The roast beef sandwich is one of my all time favorites.  I’m sad that I no longer have an Arby’s near my house, but with this recipe, I can try to create my own roast beef sandwiches at home.

1 cup ketchup
1/2 tsp Tabasco sauce (or a little more for extra kick!)
2 tsp water
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp pepper

In a saucepan, add all the ingredients and cook over medium heat.  Be sure to stir constantly until it comes to a boil.  About 5 to 10 minutes.

Remove from heat and let cool.

Makes 1 cup

Use this on your favorite sandwiches or as a great dipping sauce.

Copycat Jack In The Box Taco

Posted by: ChefTom in Categories: Jack In The Box, Recipes.

After last weeks recipe for El Pollo Loco Beans, I figured why not follow up with some tacos. I’ve never eaten at a Jack In The Box, but I love tacos. This easy recipe is sure to keep your family happy and prevent them from having to make a run for the border !

1 lb ground beef
1/3 cup refried beans
1/4 tsp salt
2 Tbs chili powder
1/4 cup Ortega or pico pica mild, taco sauce
12 soft corn tortillas
3 cups cooking oil, Crisco brand
6 slices American cheese
1 head lettuce, chop fine

Brown the beef over low heat, use a wooden spoon to chop and stir the meat. When the beef is brown drain the fat. Add the refried beans and use the wooden spoon to mash the whole beans into the mixture to create a smooth texture.

Add the salt, chili powder and 2 Tbs of taco sauce to the mixture. Remove from the heat. In another skillet heat 1/4 inch of oil until hot.

Spread 1/2 of the beef mixture on the center of each corn tortilla. Fold the tortillas over and press so that the beef filling holds the sides together. Drop each taco into the pan of hot oil and fry on both sides until crispy. When cooked remove the tacos from the oil and place them on a rack or some paper towels until they cool.

Slightly pry open add 1/2 slice American cheese and some lettuce. top with about 1/2 tsp of the remaining taco sauce.
