Copycat Emeril’s Essence

This is the spice blend that started it all…  BAM!

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly.

Copycat Hardee’s Biscuits

These biscuits are easy to prepare and are a great addition to any dinner.

2 cups self-rising flour
1 tablespoons sugar
1 cup milk
1/3 cup mayonnaise
Combine flour, sugar, milk and mayo into a smooth dough. Divide batter equally between 10 paper-lined muffin tins.  Bake at 350 degrees F for about 25 to 30 minutes or until golden brown and doubled in size.

Outback Steakhouse® Coral Reef 'Rita

The hot summer weather is right around the corner.  Here is a refreshing adult cocktail that goes down smooth after a hot day in the sun.

1 shot gold tequila
3/4 ounce triple sec
3 ounces sweet and sour mix
3 ounces cranberry juice
3/4 ounce Grand Marnier
lime wedge
margarita salt, for rim of glass

Moisten the rim of a 16-ounce glass and dip it in the margarita salt.
Fill the glass with ice.
Pour the tequila, triple sec, sweet and sour mix and cranberry juice over the ice and stir.
Pour Grand Marnier over the top of the drink.
Garnish with a lime wedge and serve with a straw.

Copycat Sara Lee Carrot Square Cake

2 Eggs
1 teaspoon Vanilla
6 oz Oil
1 teaspoon Salt
1 1/2 teaspoon Baking powder
2 teaspoons Cinnamon
1 cup Sugar
1 1/4 cups All-purpose flour
1 cup Carrots; grate fine
1 cup Walnuts; well-chopped
1/2 cup Light raisins; optional

Cream cheese icing:
6 oz Cream cheese; softened
1/4 lb Butter
1 lb Powdered sugar
1 1/2 teaspoons Orange extract
1 teaspoon Spice island orange peel
1 tablespoon Light corn syrup or pancake
1 tablespoon Cornstarch or flour

Combine eggs, vanilla, oil, salt, baking powder, cinnamon, sugar and flour in a bowl and mix with electric mixer on medium-high.
Beat 3 minutes scraping down sides of bowl often. Remove beaters.
Stir in carrots, wanuts and raisins. Grease and flour 9″ square pan.
Spread batter evenly in pan. Bake at 325 degrees F about 50 minutes. Cool in pan about 30 minutes. Frost with Cream Cheese Frosting and sprinkle with additional walnuts.

Prepare the icing: Cream the cream cheese with the butter until light and fluffy, using medium-high speed of electric mixer. Add half of the sugar, increasing speed to high.
Add extract and peel and beat about 1 minute. Scrape down sides of bowl often. Resume beating adding remaining powdered sugar.
Beat smooth. Frost sides and top of cake.

Serves 6
