Serves: 4
Ready In: Less than 2 hrs
Ingredients:
4 boneless, skinless chicken breasts
1 cup Margarita Mix liquid
1/4 cup tequila
1 Tbs Minced garlic
Freshly ground black pepper, to taste
Salt, to taste
Directions:
Pour margarita mix, tequila and garlic over chicken breast and let marinate for 2 hours in refrigerator. When ready to prepare drain and dust with black pepper to taste.
Grilling works best, but you can also use an iron skillet and bring to medium high temperature.
Spray an oil coating into pan and braise chicken breast until done on each side.
Serve chicken breast on top of black beans and serve with your favorite Mexican rice and a generous helping of salsa.
This is an absolutely delicious recipe. I can tell by the ingredients and haven’t even tried it yet. Thanks for giving us a chance to try things from restaurants that aren’t available in my area. Keep them coming.
Alcoholic ingredients are added to recipes for their flavorings to enhance the foods they are part of. When cooked, the foods lose the alcoholic content of the ingredients because that alcohol cooks away or evaporates.
Not to mention, there is no alcohol in this recipe. The Margarita Mix doesn’t contain alcohol, you have to add that to the Margarita Mix seperately!
Yes there is alcohol in this recipe but it’s not from the margarita mix, it’s from the 1/4 cup of tequila and yes it does cook away with the heat.
I eat alot of chicken and always looking for new ways to fix it. I will try this one very soon it sounds like it would be one to keep. Thank You
If alcholol is in a recipe it is a false statement to say that it disipatescompletely. The majority of it does with cooking, but not 100%.
Dee Dee is correct. While about 95% disipates, you still have about 5% of the alcohol in the recipe remaining. However, if your husband is in recovery from alcohol use or an illness that precludes him from having any alcohol, some recipes, while enhanced with a small amount of alcohol, doesn’t always require it for the taste. So you may want to try it sans the tequilla but just use the non-alcoholic Margharita Mix.
I also didn’t want to use tequila and was told I could substitute cactus juice or cactus nectar which I did and it was delicious! My daughter ate 2 big pieces! She and her college sorority sisters are having a get-together and they want this and Shrimp & Grits when they get here!
