I haven’t been to Olive Garden in awhile, so I figured why not bring it home with this recipe. Yes, this is the same dish that has been featured in there recent commercials. From what I hear, this dish is on point ! I just got back from the grocery store, so I’ll be back later with an update.
Serves 6
Prep Time: 10 minutes
Cook Time: 35 minutes
Ingredients
6 boneless, skinless chicken breasts
2 cups & 1 Tbsp flour
1 Tbsp salt
1 Tbsp pepper
1 Tbsp Italian seasoning
1 Tbsp roasted garlic, minced
1 cup white wine
1 1/2 cups heavy cream
5 Tbsp olive oil
1 lb linguine
1 cup parmesan cheese, grated
1 cup roma tomatoes, cored & diced
2 Tbsp parsley, chopped
Potato Crust
1 1/2 cup seasoned breadcrumbs
1/4 cup parmesan cheese, grated
1/4 cup melted butter
1/2 tsp garlic powder
1/4 cup parsley, chopped
1 small potato, peeled & grated
Salt & pepper to taste
Procedures
MIX all ingredients for Potato Crust in a bowl and set aside.
MIX 1 1/2 cups flour, salt, pepper and Italian seasoning in a shallow dish. Dredge chicken in the mixture, shaking off any excess. Heat 3 Tbsp oil in a large skillet. Cook chicken breasts 2 at a time over medium-high heat until golden brown and crisp, or until internal temperature reaches 165� F. Add more oil for each batch as necessary.
PLACE cooked chicken breasts on a baking sheet or dish and top with potato crust mixture. Transfer baking sheet to a pre-heated broiler until golden brown (1-2 minutes).
COOK pasta according to package directions. Drain and set aside.
HEAT 2 Tbsp oil in a sauce pan. Add roasted garlic, cook for 1 minute. Stir in 1 Tbsp of flour and wine and bring to a boil. Add cream, parmesan cheese, 1 Tbsp parsley, and tomatoes. Sauce is done when it is bubbling throughout and begins to thicken.
COAT pasta with sauce, then top with chicken and remaining sauce. Garnish with chopped parsley

Olive oil – can you substitute grape seed oil??? Also substitute half and half for the heavy cream? I love these recipes, but need to make them a little lighter.
In the intro email the chicken is said to be marinated in olive oil & rosemary but in the recipe it doesn’t mention marinating or include rosemary in the ingredients. Should they be marinated? What are the quantities of the olive oil & rosemary & for how long? I’d really like to try this recipe & want it to turn out right.
The recipe as listed above is correct. There is no rosemary or marination required in this recipe. Enjoy !

This was OK, but I felt like the chicken was too salty… and I’m one that likes a lot of salt. Next time I am going to reduce the 1 tablespoon of salt in the flour mixture to 1 teaspoon. I used salted butter in the Potato Crust and I think that was enough.
It didn’t have much flavor, so I will also increase the 1tsp garlic in the Potato Crust to about a tablespoon… a little less. I will increase the Italian seasoning from one tablespoon to 2 tablespoons in the flour mixture. I might add a small amount of Italian seasoning to the Potato Crust as well.
I really liked the texture, but it seemed a little bland… maybe overpowered by the salt. I’m now thinking about onion, but maybe that wouldn’t add just a hint of flavor but change the taste.
I will say, as with any bread crumb toppings, don’t burn it. I overbrowned one that was the ‘extra’ while we were eating. It just looked a little over cooked, but it caused a bad flavor.

I am looking for burger kings buffalo sauce recipe. I cant find the sauce anywhere? I dont know if you can help. It comes in a container so they buy it from sysco or somewhere. Before I start this dish, tell me how is the potato crust is “treated”/applied after it’s mixed and “set aside” – roll it out as a crust to place on the chicken, or just dollop it onto the chicken? I’m assuming “smearing” it onto the chicken would not be a good idea – that would just destroy the nice little crust that’s created.

I wouldn’t even consider making this recipe. All that fat–a cup and a half of heavy cream, five tablespoons of olive oil plus a cup of parmesan cheese. No wonder your readers are oohing and aahing over it. It caters to the well-known American craving for fat and salt. But then I wouldn’t consider eating at Olive Garden either. I just recently started getting the recipes on this site. But the Olive Garden recipe I want is the soup with the Italian sausage and a little green vegetables in it.
Italian Sausage Soup
Prep Time: 10 minutes
Cook Time: 30 minutes
Serving Size: 4 8 12
Ingredients
1 lb sweet Italian sausage, ground
1 cup white rice
1 cup chopped tomatoes in puree (1-10 ¾ oz can)
1/2 lb chopped frozen spinach (1-10 oz box), thawed and drained
6 cups beef broth
1/4 tsp black pepper, ground
Pecorino Romano cheese, for garnish
Procedures
1.COOK ground sausage in a soup pot and break the meat up with a fork as it cooks. Add in rice, beef broth, tomatoes and black pepper and bring to a simmer.
2.COOK 12-15 minutes or until rice is tender. Stir in chopped spinach and let simmer for a few minutes.
3.LADLE soup into soup bowls and garnish with freshly grated Pecorino Romano cheese
