Serves/Makes: 4
Ready In: 30-60 minutes
Ingredients:
1 tablespoon butter, melted
1/2 medium onion, chopped
1/4 cup flour
1/4 cup melted butter
2 cups half-and-half
2 cups chicken stock
1/2 pound fresh broccoli
1 cup carrots, julienned
1/4 teaspoon nutmeg
salt & pepper, to taste
8 ounces grated sharp cheddar
Directions:
Saute onion in butter. Set aside.
Cook melted butter and flour using a whisk over medium heat for about 4 minutes. Be sure to stir frequently.
Slowly add the half-and-half, continue stirring.
Add the chicken stock whisking all the time.
Simmer for 20 minutes.
Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender, about 20 minutes.
Add salt and pepper.
By now the soup should be thickened.
Pour in batches into blender and puree.
Return the puree to the pot and place over low heat, add the grated cheese; stir until well blended.
Stir in the nutmeg.
Serve.
Serving Suggestion: Pick up some large crusty rolls to use as a bread bowl.

I just have to say that my father had radiation 10 months ago for cancer. The radiation area was from right below his eyes to his collar bone. Needless to say his taste buds are coming back very slow and nothing tastes right. I made this for him for his birthday in November and he has been talking about it ever since!!!! He loved it as the rest of us ‘heathly’ people did! We also used the “Rhodes” self rising bread to made the bread bowls and it was a perfect fit.
Served this both Christmas eve & New Years day parties and both times it was a big hit. In my family we call this a “keeper” recipe.
This soup is fabulous. All four of my children (ages 9,7,5,3) loved it. My husband and I couldn’t believe how delicious this easy soup is! Keep the recipes coming!

I was a bit disappointed. I read a lot of great reviews about this soup so I decided to try it but it really didn’t come close to Panera Bread’s. I dont think this recipe deserves its title. Just to be fair, the soup was really tasty. My expectations were too high, I guess. I didn’t like it by itself but with sourdough bread I guess its alright.
Love your recipe’s. I’m looking for the Pasta Sauce or Lazagna Sauce from Buca Restrauant. It is simple great and my son wants me to make it. Hope you can find it.
