Summer is here and I’m reminded of all the carnivals and festivals.  I remember as a child always looking forward to the cotton candy and the funnel cakes !  Funnel cakes are made by pouring batter through a funnel into hot oil in a circular pattern and deep frying it until golden-brown. They can be served with just powdered sugar or with fresh fruit, jam or preserves on top!

2 eggs, lightly beatenFunnel Cakes
1 1/2 C. milk
1/4 C. packed brown sugar
2 C. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
oil for deep-frying
confectioner’s sugar - for dusting

1. In a bowl, combine the eggs, milk, and brown sugar. Combine flour, baking powder, and salt; beat into egg mixture until smooth.
2. In an electric skillet or deep-fat fryer, heat oil to 375 degrees.
3. Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into funnel. Holding the funnel several inches above the skillet, release finger and move the funnel in a spiral motion until all of the batter is released.
4. Fry for 2 minutes on each side or until golden brown. Drain on paper towels.  Repeat with remaining batter.
5. Dust with confectioners’ sugar; serve warm.
Serves 4-6
