Copycat Jiffy Corn Muffin Mix

When I think about corn muffins, I think of the little blue and white Jiffy boxes. Many recipes call for a box of Jiffy Corn Muffin Mix, here is a simple copycat recipe you can make at home. This recipe is equal to one 8.5 ounce box of Jiffy Corn Muffin Mix. A great idea is to double or triple this recipe and store it in a sealed container for later use.


2/3 cup all purpose flour
1/2 cup yellow corn meal
3 Tbsp granulated sugar
1 Tbsp baking powder
1/4 tsp salt
2 Tbsp vegetable oil
1 egg
1/3 cup milk


Combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk. Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.

If you wish to make Corn Muffins:

Preheat oven to 400 degrees F. Combine above mixture with egg and milk. Mix well.
Fill muffin tins 1/2 full. Bake 15-20 minutes.
Makes 6 muffins.

    I have also added some extras like sun-dried tomatoes in oil (drained and chopped) or crispy cooked bacon (crumbled) or some diced jalapeno peppers slices from a jar to make more of a spicy corn muffin.

  4. Wish you would do the same for Bisquick as I can not find it here in South America or Hidden Valley Ranch Dressing packets or different extracts like almond, orange, peppermint, maple, etc. or liquid smoke. Help? Help?

  5. Walmart is one of the suppliers of Jiffy mixes. if your local wally world doesn’t have it, ask them to get it in….

  7. I like to mix my own corn muffin mix, as the Jiffy mix has lard in it. I use a double mix and use 2 eggs and 1 can of creamed corn for muffins and/or corn bread.

  8. So I have a baked corn recipe that calls for one box of Jiffy cornbread mix. Can I just use the dry ingredients from the mix you listed here? Is that equivalent to one of those boxes, even if I’m not making plain cornbread??

  9. To use in another recipe use all the ingredients except for the egg and milk (unless the recipe calls for those also). The Jiffy “dry” mix does need to have the cooking oil added before the “dry” mix is used in another recipe.

  10. I want to make muffins and I am using golden cloud muffin mix I don’t have measuring cup and spoon yet,how do I measure without those things or what do I use
