OLD-FASHIONED CANDIED YAMS
3 medium yams
1 c. sugar
1 T. nutmeg
1/4 stick butter
1 t. vanilla
pinch salt
1 1/2 c. water
Peel and cut yams in quarters. Sprinkle with sugar and nutmeg.
Add butter. Add vanilla, salt and water. Cover and simmer over
medium heat until liquid forms a syrup. Remove from heat and
serve.
