Lemon Filling
(about 1/2 cup)
2 egg yolks, lightly beaten
1/2 cup sugar
2 tbsp lemon juice
2 tbsp butter
1-1/2 tsp grated lemon rind
1-1/2 tbsp cornstarch
3 tbsp water
Cook all ingredients except cornstarch and water in top part of double boiler over boiling water, stirring until thick.
Mix cornstarch with water, add to the pan, and cook, stirring, until thick.
