Two Crust Pineapple Pie
Two unbaked pie shells
Preheat oven to 425 degrees
2 Tbsp cornstarch
1/4 cup sugar
1/2 tsp salt
1 large can crushed pineapple
Cook above, stirring constantly until thickened, about 10 minutes. Add:
2 eggs, slightly beaten
1 Tbp margarine
1/2 cup sugar
1 Tbsp lemon juice
Cool, then place in an unbaked pie shell. Add top crust and bake at 425 degrees for 30 minutes.
