Faree cake
Ingredients:
2 cups flour
1/2 cup white sugar
2 teaspoons baking powder
pinch salt
1 large egg
250 gm (8-1/2 oz) butter (or margarine)
Vanilla essence
Apricot jam
Cream butter and sugar well.
Beat egg and vanilla essence and add.
Sieve flour, salt and baking powder and stir in. Mix well.
Put 2/3 in a greased sandwich tin. Add layer of apricot jam and grate the remainder 1/3 on top.
Bake at 350 deg F for 40 minutes.
Dust with icing sugar when cool.
