Default Rhubarb Cake

Rhubarb Cake



Ingredients:

1/2 cup butter
1 1/2 cups brown sugar
1 egg, beaten
1 cup buttermilk
1 teaspoon baking soda
1/2 teaspoon salt
2 cups all-purpose flour
1 1/2 cups rhubarb, diced
1 teaspoon vanilla extract

Topping

1/2 cup chopped nuts
1/2 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon butter

Cream together butter, sugar and egg.

Combine in small bowl the buttermilk, baking soda and salt. Add the 2 cups of flour alternately with buttermilk to sugar recipe. Mix rhubarb and vanilla extract in. Pour into greased and floured 9 x 13-inch pan; sprinkle topping mixture on top. Bake at 350 degrees F for 40 minutes.

Topping: Mix all together.

For apple cake, use 2 cups chopped apples and only 1 cup brown sugar.
