Here's a recipe I found in one of my community cookbooks. Its' from Bob Meyer of British Columbia.


YUMMY CARAMEL CAKE

2-1/4 cups flour
2 tsp baking soda
1/2 tsp salt
1/2 cup margarine or butter, softened
2-1/4 cups firmly packed brown sugar
3 eggs
1-1/2 tsp vanilla
1 cup sour cream
1 cup boiling water


Preheat oven to 350 F. Grease and flour two 9 x 1-1/2 inch cake pans or one 9x13-inch cake pan.

Sift flour, soda and salt together. In mixing bowl, beat butter, sugar and eggs with mixer on high speed until light and fluffy. Blend in vanilla. Stir in dry ingredients, alternating with sour cream, until smooth. Stir in water (batter will be thin).

Pour into pans. Bake about 35 minutes. Cool in pans 10 minutes, then turn out onto wire racks.
