Fresh Apple Cake
2 eggs
1-1/2 cups vegetable oil
2 cups sugar
1/2 cup brown sugar
1 tsp vanilla
3 cups all-purpose flour
1 Tbsp cinnamon
1-1/2 tsp baking soda
3 cups chopped apples
1 cup chopped pecans
Sauce:
1 cup brown sugar
1/4 cup butter
1/4 cup milk
CAKE: Beat eggs slightly. Stir in oil, sugars and vanilla. Combine flour (reserve 1 Tbsp), cinnamon and baking soda. Stir into egg mixture until smooth. Stir in apples and pecans (sprinkled with the reserved 1 Tbsp of flour to coat so they don't sink to bottom of batter). Turn into greased bundt pan. Bake at 350 F for 1 hour and 15 minutes. Cool 10 minutes; remove from pan. Serve with sauce.
SAUCE: Combine ingredients in saucepan. Cook, stirring occasionally, over medium heat 2 to 3 minutes until sugar is melted. Pour over cake while sauce is hot. Makes about 1 cup.
