BBQ BURGERS
A good way to use up leftover rice!
In food processer, pulse until ground:
1/2 cup walnuts - transfer into bowl
Add to processor and pulse to grind:
3/4 cup cooked rice - add to walnuts in bowl
In skillet, saute until tender:
1/2 onion, chopped - in
2 teaspoons oil - add to walnuts and rice
Add to walnut mixture:
1 tablespoon vegetarian "bacon" bits
1/2 tablespoon barbecue sauce
Salt and pepper to taste
Dash garlic powder - mix well
Add:
Flour - just enough to form mixture into patties. Cover and refrigerate 1 hour. Fry in skillet in a little oil for several minutes, turning occasionally.
Serve on buns with extra barbecue sauce (heated, if desired) and pickles.
