Tomato Vinegar Dressing

1/2 c tomato juice
2 T red wine vinegar
1 T olive oil
1 clove garlic, minced
1/4 t salt
Pinch coarsely ground pepper

Whisk together all ingredients. Cover tightly and refrigerate. Great on pasta salad.
