Even though this recipe does not include walnuts, feel free to add them or roll in nuts before dipping.

Maple Truffles Recipe

* 2 cups Pennsylvania maple syrup
* 1 cup half-and-half
* 8 ounces melted dark chocolate

1. In a medium saucepan, bring maple syrup and half-and-half to a simmer. Continue simmering until the mixture reaches 239 degrees on a candy thermometer.
2. Pour into a shallow baking dish and allow mixture to cool until room temperature.
3. Roll maple creams into 3/4-inch diameter balls and freeze on a baking sheet until firm. Dip frozen maple creams in melted chocolate and serve at room temperature.
