Chocolate Rhubarb Cake
Ingredients:
beat well
1-1/2 cups white sugar
1/2 cup margarine
2 eggs
1/3 cup cocoa
add:
1/2 cup--cold milk
2 cups plus 2 T flour
1-1/2 t soda
1 cup cold water or rhubarb juice
3/4 t. salt
1/2 t vanilla
3/4 cup--sweetened cooked rhubarb
Put in a 9X13 inch pan. Bake at 325 degrees for 35-45 minutes or until toothpick test proves it is cooked.
Frosting
melt in saucepan:
1/4 cup--margarine
Add
1/3 cup cream
3/4 cup brown sugar
Bring to boil and allow to boil for 1 minute!! add 1-1/4 to-1-1/2 cups powdered sugar. Mix with mixer until smooth. Spread on cool cake.
