Grilled Corn with Lemon Butter
Grilling the corn "naked" (without the husk) gives it a particularly smoky flavour and attractive grill marks.
6 corn cobs, husked
2 tbsp butter, melted
1/4 tsp grated lemon rind
2 tsp lemon juice
1/4 tsp each salt and pepper
1 tbsp chopped fresh chives
Place corn on greased grill over medium-high heat; close lid and grill, turning 3 times, until tender and browned, about 20 minutes.
Meanwhile, in small bowl, combine butter, lemon rind and juice, salt and pepper. Brush over grilled corn. Sprinkle with chives.
