DessertGuy - my friends hubbie is a big bass fisherman - so they enjoy that quite a bit.

While visiting he made some that was really good.

He started by seasoning some oil (regular vegetable oil) with cajun seasoning to use as a marinade which he marinated for only 3 minutes, turning regularly. Then he mixed cajun seasoning with flour in a plastic bag and coated the fish; deep fried until crisp and light golden brown.

You don't have to use a cajun seasoning - you can most likely use any seasonings you want. But it didn't take him long to prepare and it was really good.
