Zucchini with Fresh Rosemary and Garlic
1 clove garlic, sliced thin
2 tablespoons olive oil
4 zucchini, sliced
1 teaspoon fresh rosemary or 1/2 teaspoon
dried whole rosemary
Salt and pepper to taste
Saute the garlic in the oil, and add the zucchini. Shake the pan to coat the squash with the oil. Add the rosemary, salt and pepper. Cover, and simmer gently until barely tender, about 6 minutes
