Simple meal today
Floured some skinless, boneless chicken breasts and skillet fried in olive oil, salt, pepper, parsley and garlic cloves.
In separate heavy skillet - crisp fried potato chunks. Just cut taters in chunks and fry in oil, do not turn until "crisped" to your liking. Season with salt, pepper, garlic and parsley.
Steamed fresh carrots - add frozen peas at the end; transfer to serving dish and dot with butter.
Crusty French bread, cut into thick slices and "dried" in the oven - not quite toasted.
Romaine lettuce and tomatoes with red wine vinegar, olive oil, salt, pepper and basil.
