Sharonda - Can you use a crockpot?

I don't agree with partially cooking meats and finishing them later - bacteria sets in.

You say you hubbie bought a brisket with no flavor packet - was it in the "juice"?

I am not a "strong-flavored corned beef person" and we had ours last week. Although it came with the flavor packet - I still tossed it out. I washed off the brisket before boiling and used no flavoring whatsoever - not even salt or pepper. And I also boiled my cabbage, potatoes and carrots in the same pot. The flavor was still there.

Not knowing how your meat was packaged - I don't know what to say.
