ccpuff - You can bake a cake, pie, jelly roll, etc. and divide it into portions; wrap in foil and freeze for a later date. This way you are not wasting anything and you can eat the desserts when you want. You can always buy the individual graham cracker crusts if you don't want to cut up a normal sized pie using the crust.

If you want a pudding type dessert - try making frozen pudding pops.

Many things will freeze well for you - by the time you cut down a recipe - and including all the time for prep and clean up - you're better off making the whole dessert.

Cupcakes and muffin will freeze well also.
