Penne With Spinach And Beans
8 ounces uncooked penne pasta
1 large onion, chopped
6-ounces portobello mushroom caps, sliced
2 tablespoons olive oil
3 cloves garlic, minced
6 ounces spinach, about 4 cups
1 cup chicken broth
1 (15-ounce) can great Northern beans, rinsed and drained
2 sprigs fresh thyme, leaves picked
1/2 cup grated Parmesan cheese
Coarse salt and freshly ground black pepper
1. Cook pasta according to package directions, place in large bowl, set aside
2. Heat oil in a large sauté pan over medium heat
3. Add onion and mushrooms and cook, stirring frequently, until onions are translucent, about 7 minutes
4. Add garlic and cook 1 minute
5. Add spinach and chicken broth
6. Cook until spinach is wilted and tender, about 10 minutes
7. Add beans, and cook 1 minute
8. Season with salt and pepper
9. Add bean mixture and thyme to pasta and toss
10.Sprinkle with cheese
