Garlic oil sauce is just olive oil, garlic, some fresh ground black pepper, possibly some grated Parmesan, Pecorino Romano or Reggiano.

Start with 1/4 or 1/2 c. olive oil, add anywhere from 4 - 15 cloves of garlic (depending on taste), a few grinds from the pepper mill - that's it. The cheese is optional.

Very simple.

If desired - add a bit of white wine.

For a nice variation - you can add fresh minced parsley (dried would work), and/or hot pepper flakes.
