You don't like pork gravy?!

Everyone likes something a little different but I've found that a lot of people like this version of gravy so I thought I'd give some basic instructions. Honestly, sometimes I don't make any gravy at all because the meat is just so good by itself. To me it's the closest thing to, "Meat Candy" I've ever tasted. Crunch brown caramelized on the outside and tender and moist on the inside. It's almost sweet. The gravy, (any gravy, I suppose) just adds another layer of flavor.

I'm a garlic person and I stuff garlic in just about everything! Many are afraid to do it for some reason - ???????? - but it's their loss.
You're right about the meat candy thing - and I think that is part of the reason we don't care for pork gravy here! I love a nice caramelized outside and the fact that it falls off the bone makes it extra special. Depending on what I am making - I will make a cream-style gravy or serve with applesauce.
With the amount of garlic I use - you would think that I was warding off the evil spirits! (isn't that something a witch can do??? - dunno for sure - I'm just a Kitchen Witch!) LOL
And with a good homemade BBQ sauce - leftovers make a great pulled pork!
