Cheesy Ham-bites
About 8 servings.

A lovely dish, you can make with your leftover ham – perfect for brunch, as it can be prepared the night before, and baked in the morning.

4 eggs
1/2 teaspoon (1.25 ml) pepper
1 teaspoon onion powder
1/4 teaspoon chilli powder (optional)
1 cup (2,5 dl) milk
8 – 10 slices of sandwich bread – preferably whole wheat
2 cups (5 dl) chopped (prepared) ham
2 cups (5 dl) grated cheddar cheese

Mix the eggs with milk, pepper, onion powder and chilli powder, if using. Cut the ham in fine strips.

Line a baking pan with baking paper, and arrange the bread in the pan. You can lightly grease the paper, if you like – alternatively butter the bread ever so thin.
Mind you – the baking pan must fit in your fridge.

Sprinkle ham and grated cheese over the bread, and pour the eggs and spice over everything.

Place the baking pan in the refrigerator for at least 6 hours.

In the morning, preheat the oven to 310°F (155°C), and bake the pan of cheesy ham-bites for 20 – 30 minutes.

Serve immediately in the pan, or cut into individual servings.
