You can use any recipe you want - even the vanilla wafer recipe (changing from a cookie bottome to any crust you want).

MINI CHOCOLATE CHIP CHEESECAKES


MAKES ABOUT 4 DOZEN

1 ½ lb. cream cheese (24 oz.)
1 egg
1 1/3 c. sugar
1 ¼ c. mini chocolate chips
1 ½ c. flour
¼ c. cocoa
1 t. baking soda
1 c. water
1/3 c. vegetable oil
1 t. vanilla

Combine cream cheese, egg and 1/3 c. sugar. Add chips. In separate bowl, combine flour, cocoa, soda, water, oil and vanilla. Spoon chocolate mixture in mini muffin cups until half full. Place 1 t. cream cheese mixture on top of each cupcake. Bake 350* F. for about 30 minutes or until top springs back when gently pressed.

Cool on rack 10 minutes before serving.
