I'm an onion lover - heck I love food - period. I love to cook. Sometimes - or should I say - most of the time - I make too much of something.
For instance - caramelized onions - I just happened to make enough to use for another dish. Caramelized onions never go to waste. I caramelized them in a mixture of butter and oil.
I took a half brick of cream cheese (half an 8 oz brick) and softened it; combined it with 1/2 c. sour cream and 1/2 c. mayonnaise and beat well; sprinkled with a bit of cayenne and add cooled caramelized onions; mix well.
Served with crackers and had a nice dip.
