My sister-in-law used to make pancakes with cottage cheese or plain yogurt. Search for pancake recipes using one of those ingredients until you find one that appeals to you.

You won't like a pancake made with only flour and milk. At least put an egg white in or some baking powder or soda. Just flour and milk will be way too flat and tasteless. Even a crepe would have egg in it besides the flour and milk! Actually, crepes might appeal to you.

And don't worry if a recipe makes more than 2 pancakes. The batter would keep for a couple days or cook them all at night and then cool on a cooling rack then package 2 per bag and then zap them in the microwave in the morning to reheat them.
