Pumpkin Cookies

1/2 cup shortening
1-1/4 cups brown sugar
2 eggs
1-1/2 cups cooked, mashed pumpkin
1/2 tsp salt
1/4 tsp ginger
1/2 tsp nutmeg
1/2 tsp cinnamon
2-1/2 cups cake flour
4 tsp baking powder
1 cup raisins
1 cup chopped nuts
1 tsp lemon extract

Cream shortening and sifted sugar thoroughly.

Add eggs, pumpkin and seasonings. Blend well.

Sift flour and baking powder together, stir in raisins and nuts.

Add flour mixture to the creamed mixture and beat. Blend in lemon extract. Drop by teaspoon onto greased cookie sheet.

Bake 15 minutes at 400. Makes 36.

** I'm sure that you can adjust your oven temperature to 350 and cook for longer time. I NEVER bake cookies higher than 350. However, I've never tried this recipe.
