Peanuts: Blistered
2 cups raw peanuts
Boiling water to cover
Oil for frying
Put raw peanuts in a metal bowl or saucepan. Pour boiling water to cover by a good inch. Let set about half an hour. Drain for another half hour.
In large frying pan, pour oil 1 inch deep. Heat to high-medium-high. Fry about half the peanuts for 4-5 minutes or until lightly browned. Test for doneness. Repeat with remaining peanuts. Let dry on several thicknesses of paper towels.
Add salt to taste.
