2 Lbs Tomatoes, Halved, Seeded, Chopped
1 Cup Chopped Green Onions (white & Pale Green Parts Only)
7 Oz Feta Cheese, Crumbled
6 Tbsp Chopped Fresh Parsley
¼ Cup Chopped Fresh Dill
¼ Cup Extra-virgin Olive Oil
12 Oz Penne Pasta


Mix First 6 Ingredients In Large Bowl. Set Tomato Mixture Aside.

Cook Pasta In Large Pot Of Boiling Salted Water Until Just Tender But Still Firm To Bite, Stirring Occasionally. Drain.

Add Hot Pasta To Tomato Mixture & Toss To Coat.

Season To Taste With Salt & Pepper & Serve.

1/4 cup red onions
1/4 cup olives
1/4 cup tomatoes
1/4 cup spinach
2 oz. feta cheese
1 oz. parm cheese
2 oz. house greek dressing
1/2-3/4 angel hair pasta

Directions
Cook Pasta and Chicken Seperately and then mix the ingredients in the pan.

Greek Vinaigrette
Makes about 1 1/4 cups


1/2 cup red wine vinegar
3 garlic cloves, minced
1 tablespoon fresh chopped basil (or 1 teaspoon dried)
1 teaspoon fresh chopped oregano (or 1/2 teaspoon dried)
1/2 teaspoon dried marjoram (optional)
3 tablespoons lemon juice (about 1 lemon)
3/4 cup olive oil
Salt, to taste
Freshly ground pepper, to taste

Combine first 6 ingredients in a medium bowl. Slowly whisk in oil until blended. Season with salt and pepper. Keep refrigerated in an airtight container for up to 1 week.

OR


1/2 cup extra virgin olive oil
2-3 tablespoons lemon juice (or lime)
1/4 cup white wine
1 teaspoon lemon zest (or lime)
1 garlic clove, minced (more if you like)
3 tablespoons fresh mint, chopped (or fresh parsley)
1 tablespoon fresh marjoram, chopped
1/2 teaspoon ground pepper, fresh

Combine and whisk ingredients together.
If desired, chill before using.

OR


1 (2/3 ounce) packet of good seasons Italian salad dressing mix
1/4 cup red wine vinegar
3 tablespoons water
1/4 cup olive oil
1/4 cup vegetable oil
1/4 cup crumbled feta cheese
2 tablespoons chopped kalamata olives


Whisk together all ingredients.
Serve atop greens, etc. or use as a marinade.
