Grilled Catfish with Scallion-Anchovy Vinaigrette II
Ingredients:
1 lb catfish fillets
2 t. light soy sauce
1/4 t. red pepper flakes
3 T dry white wine
Make marinade by mixing soy sauce, pepper flakes & wine together. Marinate fish 30 min. in frig.
Grill over hot coals or broil in oven 5-7 min.
Baste often w/ marinade.
Makes: 4 servings
