Oven-Baked Catfish
Ingredients:
1 cup Pepperidge Farm corn bread stuffing, crushed
1/2 teaspoon paprika
1 lb. fresh or thawed frozen catfish fillets
1 egg, beaten
2 tablespoons butter or margarine, melted (optional)
cream ranch or chunky blue cheese salad dressing
Mix stuffing and paprika on plate. Dip fish into egg. Coat with
stuffing mixture. Place fish on baking sheet. Drizzle with
butter/margarine. Bake at 400ºF for 20 minutes or until done. Serve
with salad dressing.
