Fish Fritters
1 lb small fish
3 eggs, separated
3 tbsp flour
1/2 tsp salt
1/8 tsp pepper
1/8 tsp minced garlic
1 tbsp mined parsley
Cook fish, remove skin and bones and mash.
Beat egg yolks until light and thick, then add flour, salt, pepper, garlic, parsley and fish.
Fold in whites of eggs which have been beaten until stiff.
Drop by tablespoons into hot deep fat (360 to 370 degrees) and fry until brown. Serves 4.
Add 1/2 cup diced drained pineapple.
Serve with tomato ketchup or tartar sauce.
