Italian Salad
1 large cucumber
2 large ripe tomatoes, sliced
2 scallions with tops (green onions), sliced
4 ounces mozzarella cheese, cut into 1/4-inch dice
1/2 cup spa vinaigrette (recipe follows)
2 tbsp chopped fresh basil
Freshly ground white pepper to taste
Vegetable seasoning to taste
Peel cucumber and cut in half lengthwise. Scrape out seeds with spoon and slice cucumber into thin semi-circles.
In bowl, combine cucumbers with all remaining ingredients and toss lightly.
Spa Vinaigrette
2 tbsp extra-virgin olive oil
2 tbsp vinegar
2 tbsp sparkling mineral water
1-1/2 tbsp fresh lime juice seasoned with chopped herbs.
