Default Fajita Soup Recipe

Hello, I'm new today to this site and am hoping to find a recipe that tastes like Chili's Fajita Soup. Thank you.

I don't have Chili's recipe - but I have these:

2 pounds chicken tenders
Vegetable cooking spray
1 cup diced onions
1/2 cup green onions, sliced
1 red bell pepper, sliced
1 packet taco seasoning mix
4 cups V-8 vegetable juice
1 1/2 cup black bean and corn salsa
1 jalapeño pepper
4 tablespoons sour cream
Baked tortilla chips

In a medium-size skillet sprayed with vegetable cooking spray, brown chicken tenders over medium-high heat. Cut chicken tenders into bite-size pieces and set aside.

Meanwhile, sauté onions and bell pepper over medium heat. Place chicken and vegetables into slow cooker and add seasoning mix, juice, salsa and jalapeño pepper. Cook on Low for 6 to 8 hours.

Ladle into 4 serving bowls and top each with 1 tablespoon sour cream. Serve with tortilla chips.






Santa Fe Chicken Fajita Soup


* 1 pkg. (1.4 oz.) Fajita Seasoning Mix
* 1/3 cup water
* 1 lb. boneless skinless chicken breasts, cut into thin strips
* 4 large cloves garlic, minced
* 2 Tbsp. chopped fresh cilantro
* 1 large red onion, chopped
* 1 small green pepper, chopped
* 1 pkg. (8 oz Cream Cheese, cut into cubes
* 1 lb. (16 oz.) Velveeta, cut up
* 2 cans (14.5 oz. each) reduced-sodium chicken broth



1. COMBINE seasoning mix and water in medium bowl.
2. Add chicken; toss until evenly coated.
3. Cover.
4. Refrigerate at least 30 min.
5. SPRAY large nonstick saucepan with cooking spray.
6. Add garlic and cilantro; cook on medium-high heat 1 minute.
7. Add chicken mixture, onions and peppers; mix well.
8. Cook 10 minutes or until chicken is cooked through, stirring frequently.
9. ADD cream cheese, VELVEETA and chicken broth; mix well.
10. Reduce heat to medium.
11. Cook until cream cheese and VELVEETA are completely melted and chicken mixture is heated through, stirring occasionally.
12. Garnish with additional chopped cilantro, if desired.




* 1 large chicken breast
* 5 cups water
* 1 medium onion sliced

* 1 envelope of fajita mix
* 1 cup of salsa
* Garnish with your choice of: chunks of avocado, cilantro, grated cheese, chopped tomatoes or tortilla chips.



In a soup pot, cut up one large chicken breast into cubes and place into 5 cups of boiling water. Add 1/4 to 1/2 an envelope of fajita mix to pot (according to taste) Slice up one medium onion and one green pepper and add half of each to soup. While soup is cooking for about 15 to 20 minutes take other half of onion and pepper and saute in small amount of olive oil in frying pan, until almost soft. Add some or all of the remaining fajita seasoning to pan (according to desired spiceness) and saute till slightly blackened on edges. Add to the soup for the last few minutes of cooking along with the cup of salsa. To serve, add chunks of avocado and tomato, grated cheese, cilantro or tortilla chips as a garnish.
