Default Details about various herbs/spices/seasoning

Hello, first I would like to introduce myself a little bit. I am a 20 year old female. I grew up in a single-parent home with my dad as the primary guardian. While he did a great job cooking for us growing up, he and my brother have very simple palates. Neither of them eat any 'foreign' foods, nor do they like their food seasoned with herbs and spices. They're pretty much 'meat and potatoes' kinda guys.

Unfortunately, though I learned to cook at a very young age... I know NOTHING about how to properly season anything, nor do I know "which" herbs go well with which foods. I have recently discovered a profound love for rosemary, especially on chicken and potatoes. I also have started making salsa's with cilantro. But other than cilantro and rosemary, I have never cooked with any other herbs.

I was hoping to get a bit of a 'crash course' in the most common/most used herbs. If possible, could anyone with advice list what kind of foods different herbs are most commonly used with, and possibly even link me recipes on this forum that highlight the use of a particular herb.

Regarding herbs and spices - if you go to the Cooking Tips forum - then go to SEARCH a type in spices and herbs it will give you the various threads regarding the uses.

Even thought I have been cooking for many years, and am told I am very good at it, I bought a book titled "The Spice and Herb Bible" by Ian Hemphill which is VERY good and informative. I got it throught a book club but if you enter it into Google or another search engine I'm sure you can find it. Good luck.

Shecrafty, you might also check around your community for various one day classes on savory cooking, the chefs there will answer all the questions you have, you get to learn to cook the dishes, get recipes for them and best of all feast on the results. Or if where you live they have a spice shop go in there and ask the clerk about various spices and what they go good with. Patty.
