Default Help! looking for grandma's lost recipe

my grandma use to make this bread that she served with pinto beans. She has passed on and I can't find this recipe anywhere I remember watching her make this from what i can recall its contents were as follows not sure of measurments though.

refridgorated instant potatoes
cornmeal
flour
sugar (I think) cause it had a light sweet muffin taste to it
egg
milk

and she would cup the mixture by handfulls and press it into palm size patties and fry them. the result was chewy like fried dough kinda like a thicker pancake with a sweet cornbread taste to it . please if anyone has a replica to this it would be so much appreciated I miss grandmas cooking

Many times our grams would make "do" with leftovers. These also sound like a latke/potato pancake. Sometimes the "patties" were formed and then pressed into cornmeal before frying. Cornmeal and flour combinations are used for many things. These could have been a very heavy potato pancake. You can experiemnt with leftover mashed potatoes - add your flour and cornmeal, an egg and a bit of milk until you get the right consistency. I hope this helps.

1/4 c. potato flakes
1/2 c. flour
1 c. cornmeal
1 rounded tsp. baking powder
1/2 tsp. salt
1/2 tsp. sugar


Mix all ingredients well. Add boiling water until moistened. Heat shortening in iron skillet. When grease is hot, drop in cornbread which has been rolled between hands. Brown and serve.
