Any ideas for a moist turkey burger? Mine always seem to come out dry.

how are you cooking them?

ground meats should be handled as little as possible - like pie crust (gently) and areyou using any fillers - like oatmeal, etc.?

No, I don't usually use any fillers. Sometimes I'll add one egg to help it all stick together. My DH is on a low carb diet, so I usually just use a little store bought seasoning.

In addition to handling as little as possible, like Kitchen Witch said, while watching Jacques Pepin make salmon burgers on TV, he says he always adds minced onion and finely-chopped mushrooms to his meat (fish) mixture. He says these ingredients add moisture. The mushrooms, at least, are quite low-carb. Perhaps that would help. Also, years ago, I saw a cooking show where they gently formed their ground meat patty around a small ice cube, which melted and added moisture as the meat cooked. I wonder if several ice chips would work better? Anyway, hope this helps.

I normally add chopped brunoise veggies to my burgers. Vegetables are full of water and help keep the burger moist. I would suggest lightly sautéeing the veggies first.

Onions, carrots, cauliflower and leeks go very well. I think mushrooms have a little too strong a flavour and change the end taste unless one is looking for a mushroom flavoured burger.

Here is a recipe I just tried for the first time last night and the burgers came out nice and juicy:
1 lb ground turkey
1 cup grated cheddar
1 tbs balsamic vinegar
1 tsp parsley
1 tbs dried chives (or 2 tbs fresh chopped)
1 tsp dried onion
1 tsp garlic powder
dash each of salt, pepper, and parprika

Combine above into loosely packed burgers (I made four). Place a bit of olive oil in grill pan, add burgers and cook on medium with pan covered (supposedly this is what keeps them moist). Cook 3-4 min each side, turning as little as possible. I cooked about 3 min each side, then added a slice of fat free cheese and cooked another min w/pan covered. Yummy cheeseburger w/minimal fat....

Yeah I think the most important thing is how you are cooking them.

Are you grilling? If so I would flip them very often. That helps my burgers stay moist as it keeps the juices inside.

Take turkey chop meat fry it until brown
Add 1/2 head of very fine chopped lettuce
1/2 bag of Tortilla plain flavor chop into breadcrumbs
1/2 Bottle of plain Italian dressing
Mix all together than eat so//////////////// well
