popsicles that aren't hard as a rock - how to make?
I've searched the internet in vain to find out how commercial popsicle companies make the popsicles that aren't hard as ice.
I've added corn syrup, xanthan gum (just makes them slimy), more sugar, less sugar, nothing I've tried seems to work.
Any ideas?

I've made popsicles, juice pops, fyogurt pops, fudgsicles, etc. for years using all different ingredients - but never adding xanthan gum.
Have you tried this:
1 pkg. any flavor Kool-Aid
1 pkg. Jello
1 1/4 cups sugar
3/4 cup hot water
3/4 cup cold water
Mix dry ingredients together. Measure approximately 6 tbsps. dry
ingredients into a mixing bowl - add hot water and cold water.
Pour into popsicle molds and freeze. Remaining dry
ingredients may be stored in airtight container to make more
popsicles at a later date.

would this be of interest:
2 cups fresh or frozen blueberries
1 8 ounce carton of blueberry Yogurt
Blend together in the blender. Transfer to popsicle molds or small papper cups with popsicle sticks. Freeze and enjoy!
Try this with strawberry, raspberries, etc.

Thank you Kitchenwitch - I'm trying to be vegan so Jell-O would be out. I should have specified that. (which is why I tried the xanthan gum). I was trying to use just pure juice and some sort of sweetener if necessary (like with Cranberry juice) and whatever I need to make it not be as hard as a brick.

Jaroslaw - I like to freeze juices as well as fresh fruit popsicles.
Measure out four cups of the desired fruit and put into a medium mixing bowl, food processor, or blender. (The appliance used depends on the consistency desired for the popsicles. If larger chunks of fruit are desired, mash with a fork or a potato masher; for smoother consistency, choose the food processor or blender.)
Puree or mash until the fruit reaches the desired thickness.
Add 2 tablespoons of sugar and mix well. (While this does not seem like a lot, I assure you it is plenty!)
Transfer mixture into popsicle molds. Cover with popsicle lids, and put into the freezer. Allow popsicles to freeze for 4-5 hours before removing them.
You may want to give this a try.
I'm just the opposite - I love hard-frozen popsicles - I love to crunch ice too - been like that all my life.

Cookies 'N Cream Frozen Popsicles
1 cup Cool Whip
12 Oreo Cookies - crushed
1/2 cup milk
1 4-serving pack of Vanilla Instant Pudding
Mix, transfer to molds, freeze and enjoy!
