Default Re: sweet pickles cooked in oven?

Never can using your oven. It is not safe and the bacteria content is high.

Some that want crisp pickles will brine them over night - soaking them in a salt solution of 1/8 to 1/4 cup salt per one quart of water. Then proceed as directed in the recipe for the canning process.

The salt draws the water from the tissues of the vegetable and makes them crisp and firm and better prepared to absorb the pickling solution.

Can as directed - use a Ball Blue Book - if not - type in pickles in the search here and you will find tons of recipes and how to can the proper and safe way.

BTW - my neighbor is from the old country - cans using her oven - NO ONE will eat it except her.

Canning and preserving foods is nothing to play with.

I hope this helps.
