Default Chicken & Bacon.. any ideas?

Hello!

I'm cooking for the parents tonight. Unfortunately, my Dad has only bought 2 chicken breasts, but there's 3 of us! In this situation, we usually chop up the chicken and pad it out with some onions and peppers, some garlic and maybe some chilli.. and throw it all together in a tomato based sauce or something similar..

BUT! I fancy something different tonight so has anyone got any ideas? There's a couple of chicken breasts, a pack of bacon and most 'normal' veg that you would find in an English person's fridge.

Looking forward to hearing some lovely suggestions!!

try cutting the breasts into fingers and sprinkle with paprika or cumin; wrap a bacon strip around each finger; place in broiler, broil 4 to 5 minutes, turn and broil the other side 2 to 3 minutes - remove and baste with BBQ sauce and return to broiler for a minute or two, turn and baste the other side and broil a minute or two

serve with a nice veggie salad - steam veggies and serve with either a vinaigrette or creamy dressing -
cook and crumble bacon and add to ranch dressing for something a bit different

If the chicken breasts are thick you can pound them flat and provide you better and more even servings. Cut into thin strips, lots of veggies and do a stir-fry. Maybe serve over chinese noodles.
