Red face Help I've fallen (in Oil) and I can't get up!

Please please someone tell me how to sop up the excess oil in my stew, I cannot serve it like this. It taste good but too much oil for some guests I am sure. Help!

You cant try and stretch the sauce so that in the end you get more sauce with proper ingredient balance?

You can put it in the fridge until the oil hardens then scrape it off. You can use slices of soft white bread to mop it up or there are grease mops available at cookware stores.

Placing in the fridge is the easiest thing to do - the fats will float right to the top and you can skim them right off. Always drain that meat good after browning it well to try to avoid this. Bread will do the job - depending on just how much grease/fat there is in the stew. I don't think stretching will do anything except give you a greasy mess - you don't want a grease flavor.
