Chilies Rellenos
I am just curious. I was talking to the owner of a Mexican/American restaurant tonight. We got around to talking about chilies rellenos and, even though poblanos are not available here (except for the ones I have growing on my balconies). He said that when he made them in his restaurant in San Diego he would boil the poblanos to remove the skins. I have never heard of doing it this way, only to either deep fry them or to roast them on an open fire (my preference) or under the broiler. Has anyone here ever boiled poblanos to remove the skins?

lvdkeyes -
you can boil peppers (cut not whole) or even when sauting - the skin loosens and you can peel it right off I've done it plenty of times

For chilies rellenos the peppers need to be whole with just a slit to stuff them.

they should still peel with no problem - I've done it with peppers that have been slit to stuff, pepper slices, and chunked peppers - I should have explained myself better when I said not whole - I've never done it with a "whole" (totally uncut) pepper - those I do on the stove top burner - am I still being fuzzy???

Now I understand. ( I think, LOL) for whole poblano peppers for chilies rellenos you char them over an open flame? Right?

when I get "lazy" I will place a pepper on the burner to char - when I'm not rushed I'll take the time to remove the stems, slit, clean out the seeds and membranes and depending on the number of burners I'm using for cooking and what's going on in the kitchen - I may just plunge them in boiling water and skin - just a typical woman who can be unpredictable -
depends on -
what I'm making -
if I feel like waiting for the water to boil -
how many I have to do -
if it's something I am making ahead of time -
etc, etc, etc, etc
you know how us girls are -
