Default Cod Lemon Tarragon

I have some fresh cod and was going to bake it in foil with some lemon and butter. I have a tarragon plant and wondered if a few leaves would help or hinder the flavour. Also should I add and garlic or white wine.

Please help, first time poster and not much time til dinner!!

Of course you can season with tarragon and you can add garlic and white wine if you want. All of this will compliment your lemon pepper.

Just to let you know how i got on

I baked for 20 minutes and i think it was a little overdone even though they were quite thick fillets. Liquor was a little thin also and I think a little reducing would have helped if i had the patience.

All in all not a bad result

Other than being overcooked a bit - it doesn't sound bad!

I don't know how long you cooked the fish - but when I bake fillets - it's usually 20 - 25 minutes (depending on fillet size) at 375 - 400* F. When it flakes with a fork it is done.
