Hi bones!

As far as breading VS batter - it's all a matter of preference.

Go to the Recipe Exchange and look up (in the search) Heat Up the Deep Fryer - there are tons of recipes and how-to's there.

Also -

DEEP-FRIED ZUCCHINI

Makes 4 to 5 dozen
1-1/2 cups all-purpose flour, divided
2 tablespoons cornstarch
3/4 teaspoon lemon pepper
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon onion powder
1 cup milk
1 egg
1 pound fresh zucchini (about 3 medium)
Butter flavor crisco for frying
Grated Parmesan cheese

In medium mixing bowl combine 1 cup flour, cornstarch, baking powder, salt, lemon pepper, onion powder, milk and egg. Blend until smooth. Refrigerate for at least 30 minutes.
Cut zucchini into 1/4-inch diagonal slices. Rinse and pat dry. Shake slices in remaining 1/2 cup flour to coat.
In deep-fat fryer or deep saucepan heat 2 to 3 inches crisco to 375ºF. Dip floured zucchini in chilled batter. Let excess drip back into bowl. Fry a few at a time in hot oil for 4 to 4-1/2 minutes, or until golden brown, turning several times. Drain on paper towels. Serve immediately or keep warm in 175ºF oven. Sprinkle with Parmesan cheese before serving.

Tip: to make a day ahead, prepare and fry as directed. Cool. cover and refrigerate. Reheat in single layer on baking sheet in 425ºF oven for about 10 minutes, or until hot. Sprinkle with Parmesan cheese.

Beer Battered Zucchini

1 zucchini

Batter:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg
6 ounces beer
2 dashes Tabasco sauce

Slice zucchini, coat with flour and set aside. Combine remaining ingredients in large bowl, beat until smooth. Let sit for 15 minutes so the yeast can work on the flour. Fry in a little olive oil.

Zucchini Stix

Nonstick olive oil cooking spray
3tablespoons seasoned dry bread crumbs
2tablespoons grated Parmesan cheese
1egg white
1teaspoon reduced-fat (2%) milk
2small zucchini (about 4 ounces each), cut lengthwise into quarters
1/3cup spaghetti sauce, warmed

1.Preheat oven to 400°F. Spray baking sheet with cooking spray; set aside.
2. Combine bread crumbs and Parmesan cheese in shallow dish. Combine egg white and milk in another shallow dish; beat with fork until well blended.
3. Dip each zucchini wedge first into crumb mixture, then into egg white mixture, letting excess drip back into dish. Roll again in crumb mixture to coat.
4. Place zucchini sticks on prepared baking sheet; coat well with cooking spray. Bake 15 to 18 minutes or until golden brown. Serve with spaghetti sauce or marinara.
