Probably because some people like onions in their mac 'n cheese.

emt - there are many recipes here on RSN for Mac and Cheese that have "additives" to them for whatever reasons - onions, tomatoes, ham, peppers, various veggies, just about anything. Sometimes it is to stretch the dish, sometimes it is because they want to tweak a recipe and make it "theirs", sometimes it's just personal taste.

That's the fun in cooking - playing with recipes can give you something new and different - and many times it can ruin a dish. Just depends.
